Sweet Potato Burgers

These sweet potato burgers bring together some great flavors and textures. Topped with a spicy aioli and cooling mixture of avocado and lime, this burger will become one of your favorites!

Pierce the sweet potato with a fork a few times and then bake at 400 degrees for 45 minutes to an hour, until tender. If you are short on time, you can also cook the sweet potato in the microwave – just wrap it in a wet paper towel and cook for 5-6 minutes.

Once the potato has cooled, peel and mash in a mixing bowl.  Add the beans and continue to mash until well combined.

Add the onion, fresh lime juice, flour, spinach, chipotle, and salt.

If you don’t have spinach or don’t like it, you can use a different type of green. I have tried both parsley and arugula, and they both turned out great!

Mix well to combine – this takes a while, but it will come together eventually.

Form patties the size of your buns.  Press the patties into Panko bread crumbs to coat.

In a preheated pan, fry the burgers in a small amount of oil.

I like to serve my sweet potato burgers with a spicy mayonnaise, onion, tomato, and avocado slices.

Instructions
  1. Pierce the sweet potato with a fork a few times and then bake at 400 degrees for 45 minutes to an hour, or until tender.
  2. Once the potato has cooled, peel and mash in a mixing bowl. Add the beans and continue to mash until well combined.
  3. Add in the onion, lime juice, flour, greens, salt and chipotle. Mix well to combine.
  4. Form four patties out of the mixture and press both sides into the breadcrumbs.
  5. Heat vegetable oil in a large skillet. Cook the patties until browned on both sides. Remove and place on a paper towel to remove excess oil.
  6. Place a burger on each bun and top with onions, tomatoes, avocado, and spicy aioli mixture.
